A very special and one of the lost recipes of India.It is being called as DOLI KI ROTI.
DOLI KI ROTI is a flat bread leavened with sour dough.It is a dish from the lands of Multans and the undivided Punjab.It gets its texture and flavour from the spiced-sour dough.

It is being cooked and eaten fondly in the seasons of summer.The main flavouring of the roti is being prepared by adding water,jaggery and spices like poppy seeds,nutmeg,cinnamon,etc. Now,this flavouring is mixed with atta to prepare the dough. This dough has to be prepared at least 2 days before the doli ki roti to be cooked. Once the dough is completely fermented,the roti is rolled, deeply fried and served to eat. |

But the most interesting fact about why is it being called as doli ki roti? Still has many stories.One of the most famous is that, as the name suggests bread was prepared and given to the newly married daughter along with her doli during vidai,so that she can eat it during the travel.Also,the roti can be easily preserved for 2-3 days.
