       Place of origin: Sekhawat Province
Cuisine: Indian

A very unique Cuisine from the Rajputana rulers of Sekhawats. This dish is believed to be influenced from Mughals cuisine and also has some traces from the British food habits.

This dish was usually prepared and eaten when the Kings used to go for war and had to hunt the animals for food. The gosht and intestine used to be extracted from the body of hunted animals. The intestine used to be filled with the same marinated gosht.

The keema is usually marinated with the dry masalas such as coriander powder, black pepper, dry fruit ,salt. The uniqueness of this keema is that it requires no oil ,even the marination is done with only dry masalas as it was easy to preserve them for longer time period.

The intestine is being filled with keema with the help of funnel and tied at small lengths and finally the intestine is being tied onto the kebab sticks.

Why it is not a part of today's food menu?

This dish is not cooked anymore as Hunting is not in practice now and its a crime. The basic preparation needs more than 10-12 hrs. Also these are kind of sausages which are easily available in the market now-a-days.
