SUKSI PURGA
SUKSI PURGA
Place of origin: Chattishgarh,India
Cuisine: Indian
The SUKSI PURGA is a Chattishgarhi dish which used to be a very famous dish among the Adivasis of Bastar.
The MURIA Tribe of Chattishgarh are a part of Gondi People. They are economically homogenous.
The 'Muria' words come from the word 'MUR' whicb means root or permanent. They are self sufficient in producing and consuming many vegetables and lentils, but Suksi is one of the luxuarious food being served with Paan Roti.
The SUKSI PURGA is a dried fish food reciepe which uses small dried fish which are preserved using an ages old smoking technique.
The main ingredients of this reciepe which makes it different from others are:
Jeera bhaji
Jeera bhaji flower powder
Jeera pulla
All these three ingredients are only found in this region of the country and gives citrus flavour to the dish.
All these ingredients are not available throughout the year.Hence, when available during the monsoon ,these are dried and preserved for later use.
The Muria tribe uses a traditionally Extracted Torri oil made from Mahua seeds.
The other fascinating fact about the reciepe is that the after marinating the fish with all the ingredients ,it is packed inside a bowl/platter made from paan/Betal leaves and cooked in Angithi.
Due to lack of availability of the ingredients and not able to cook it in brazier, the reciepe has been forgotten by most of the Muria Tribe people and is rarely cooked on special occasions.
